The best light for photography is either early morning or late afternoon. Nobody wants to get up a 4AM to get ready for a morning ceremony so plan on a late afternoon wedding ceremony when the light is at it's best. I recommend ceremonies begin 3 hours before sunset.
If your wedding day timeline goes late you still have plenty of time for photos after your ceremony with the golden hour light. Late day ceremonies are fantastic for photography, but consider your guests too. Offer food, horderves, charcuterie boards and snacks during cocktail hour as dinner will probably be around 830PM after late day ceremony and photos.
